A Variation on Italian Wedding Soup



So, the kiddo is home sick today.  Sore throat, congestion.  That sort of thing.  With the whole H1N1 scare, I just decided to keep her home.  Glad I did because now she has a low grade fever.

It's also a bit nippy here.  Well, nippy by Texas standards.  Which means soup is on the menu tonight!

I created a variation of Italian Wedding Soup that is easy and yummy and a big hit with Shane.

What's that?  You want me to share?  Sure!

Ingredients:

1 lb of hot Italian sausage (must use hot, regular doesn't taste the same)
Chicken Stock
1 12 oz package of baby spinach
Cooked Spiral Noodles

Directions:
Brown the sausage.  Drain off fat.  Add chicken stock and spinach.  Simmer for 15 minutes.  Add noodles and serve.

I said it was EASY!  Enjoy!
